Savoury Extra Virgin Olive Oil Cake
This savoury olive cake from food52 is a great starting point for tucking in to after a bracing walk in the woods.
Ingredients
- 1 ½ cups all-purpose flour
- 1teaspoon baking soda
- 1 teaspoon sea or kosher salt
- 8 ounces Greek-style yogurt, plain
- 4 ounces Morocco Gold extra-virgin olive oil
- 1 tablespoon honey
- 1/2 cup Kalamata olives, roughly chopped
- Zest of one orange and one Meyer lemon
- 1 teaspoon fresh rosemary, minced
- 1 teaspoon fresh thyme, minced
Method
- Preheat oven to 350 degrees. Line the bottom of an 8” cake pan with parchment, and pan-spray the sides.
- This is a one-bowl operation. Set a sieve over a mixing bowl. Measure the dry ingredients into it, then sift them into the bowl.
- Add the yogurt, olive oil, honey, olives, citrus zest, rosemary, and thyme. Stir with a wooden spoon or rubber spatula just enough to blend all ingredients.
- Pour into prepared pan. Bake until a paring knife inserted in the center comes out clean, about 30-35 minutes.
Savoury Extra Virgin Olive Oil Crackers

Ingredients
- 300g plain flour
- 4g salt
- 140ml water
- 70g Morocco Gold extra virgin olive oil
- 40g sesame seeds
Method
- In a large bowl sift the flour with salt. Make a well and pour in the water and oil. Mix flour and liquid to reach the consistency of a dough.
- Sprinkle the sesame seed on a clean working surface. Transfer the dough to the work surface and knead vigorously for few minutes, incorporating the seeds until the dough is smooth and soft. Shape into a ball with your hands, cover with a towel and let stand for 10 minutes.
- Preheat oven to 180 C / Gas 4. Brush a baking tray with some olive oil.
- Divide the dough in 4 pieces and roll out each piece into a 1 to 2mm thick rectangle, the size of the baking tray. Transfer the first rectangle to the baking tray and with a fluted pastry wheel cut 5x10cm rectangles and prick with a fork.
- Bake in preheated oven for 10 to 12 minutes until crisp. Remove from the oven and cool a bit in the baking tray and then transfer to a cooling rack to cool completely. Proceed in the same way with the 3 remaining rectangles of dough. Serve or store in an airtight box.
Tips: Sesame seeds are totally optional: Replace them with poppy seeds, toasted rosemary or dried onion.

- 2 ½ – 3 cups bread flour (plus extra for kneading)
- 1 cup shredded Granny Smith apple
- 2 cups ice
Method
